Using traditional and time-consuming techniques, Journeyman gently tumbles the Kurobuta pork bellies in brine that includes local apple juice for several hours to develop a deep rich flavor. The bacon is smoked over genuine applewood sourced from the Dutton Ranch in Sebastopol, CA.
